Birthday Cake and Ice Cream Sandwiches

Easy Birthday Cake Bars

A quick and easy way to get your birthday cake fix, these bars are made from a boxed cake mix and doctored up with sprinkles and white chocolate chips. Perfect for a kid’s birthday party or any time you need a little color in your life. 

Ingredients

1 box yellow cake mix

½ cup vanilla coffee creamer (or sub milk)

½ cup canola or vegetable oil

½ cup white chocolate chips

½ cup rainbow sprinkles

Cake batter or Birthday-themed ice cream, for serving (optional)

Instructions

  1. Preheat your oven to 350 degrees F. Adjust your rack to the middle position.
  2. In a large mixing bowl, combine the cake mix, creamer or milk, oil, white chocolate chips, and sprinkles. Mix until just blended and spread on the bottom of a 11-by-7-inch baking dish that has been sprayed or greased with butter. Bake for about 18 to 20 minutes, or just until set and golden brown. NOTE: you can use a smaller or a bigger (9-by-13) pan, but your bars will be thicker or thinner, depending, and will have slightly different bake times.
  3. Allow the bars to cool for at least 20 minutes before cutting or flipping out of the pan. You can create individual ice cream sandwiches by placing a scoop of the ice cream between two bars, or to keep it simple and fast, pile the bars up on a plate or platter (or on individual plates) and top with scoops of ice cream.
