In a medium saucepan set over medium heat, add the gooseberries, sugar, and 1/4 cup water. Bring to a simmer and cook gently, until the gooseberries and softened and burst, and the sugar and water have transformed into a thieved syrup; about 15 minutes. Cool completely before storing.Â
