¾ cup soy sauce (shoyu)
1 ½ cups water
2Â TBSPÂ honey
½ cup packed dark brown sugar
One 2-inch piece fresh ginger, peeled and sliced
2 or 3 garlic cloves, peeled and crushed
2 lbs. bone-in skin-on chicken thighs
½ Maui onion peeled and cut into 3/4 –inch wedges (you can substitute Vidalia or Walla Walla)
2 or 3 green onions white and green parts, cut into 2-inch pieces
1 ½ TBSP cornstarch
3 cups steamed rice for serving
