Easiest Cinnamon Sugar Popovers

The most airy, fluffy little “pops” of cinnamon sugar sweetness. These popovers are so simple and come together easily in a blender. They’re foolproof! Rolled around in butter and a cinnamon-sugar crust and there’s really nothing better. NOTE: 12 teaspoons of butter is basically 3 TBSP. 

Ingredients

¾ cup granulated sugar 

1 TBSP ground cinnamon

12 tsp butter (for the pan) + 6 TBSP butter, melted

3 eggs

2 tsp vanilla extract

1.5 cups milk

1.5 cups all-purpose flour

½ tsp salt

Instructions

Preheat your oven to 450 degrees F. Place 1 tsp of butter in each of 12 muffin cups. Set aside for now. 

 

Combine the cinnamon and sugar in a shallow bowl or plate and set aside. 

 

In a blender, add the eggs, vanilla, milk, and 1 TBSP of your melted butter and blend until frothy and mixed. Add the flour and salt, and mix just until combined. 

 

Place the muffin pan in the oven and allow the butter to melt. Take it out as soon as that happens (takes about 30 seconds, if that) and brush/roll the butter around the pans to grease them fully. 

 

Pour the popover batter into the muffin cups, filling them almost to the top – a little more than ¾ full. Bake for 15 to 17 minutes, or until puffed and golden brown. Take them out and allow them to cool for about 6 to 8 minutes before transferring elsewhere. 

 

Brush each popover with some of the remaining melted butter and cover with the cinnamon sugar. Enjoy warm.

Notes

For an added depth of flavor, try using browned butter in place of the melted. SO GOOD.
