Pita chips and/or fluffy pita bread wedges, for serving
Instructions
Preheat your oven to 400 degrees F. Adjust your oven rack to the middle position. Place the feta in a small ceramic baking dish (NOTE: you can use a pie plate or even a cake pan if you don’t have an earthenware dish; just line it with foil and leave an overhanging “handle” of excess foil above the edges, so you can remove the feta to a platter after cooking).
Drizzle with the olive oil, covering the feta’s surface, and bake for 10 minutes, or just until the cheese is soft but not melted.
Take the feta out of the oven. Preheat the broiler. Cover the feta’s surface with the honey. Sprinkle with the chili flakes (see note for quick-fix option). Broil just until the cheese starts to brown and bubbles slightly. Serve with crunchy pita chips and a sprinkle of fresh thyme leaves (if using).
Notes
NOTE 1: Instead of sprinkling honey with chili flakes, you can just use store-bought hot honey if you prefer. Either approach is delicious.
