I snagged the inspiration for this recipe when I was way too many minutes deep into a social media scroll-along, and I saw something like this from The Kitchn (we love them!) and knew, without a moment’s hesitation, that I would be making corn in a butter bath. It’s almost funny sounding, bordering on ridiculous, but just so wonderful because it’s actually a thing – a real thing that we can all go and do right this instant. Oh! And there’s chilis in it. I sprinkle a little crushed chili flake action into the cauldron of butter and honey, and I feel that the little bit of heat it adds – almost more of a fuzziness – really just takes it all home. It’s amazing to me how the flavor of the honey – that subtle yet unmistakeable sweetness – really permeates into the corn kernels, giving them a glow from within.

I’ve gotten carried away. I’ve digressed. I do apologize. But CORN IN A SALTED HONEY BUTTER BATH! I’m just going to leave you with the so-simple-it’s-an-unrecipe recipe and hope with all my heart that you make this while the getting’s still good. And by getting, I mean corn.

Corn in a Salted Honey Butter Bath

Corn in a Salted Honey Butter Bath

The name says it all, honestly. 

Ingredients

Scale

1 stick of butter

4 to 6 ears of fresh corn, shucked and cleaned 

1/4 cup honey

1 tsp crushed chili flakes

3 tsp kosher salt, or more if you’re me

Instructions

Place a large pot on your stove, and add the corn, butter, honey, chilis, and salt. Add enough water to fully submerge the corn, but no more. Bring everything to a boil and cook for 5 to 6 minutes, or until the corn is done, stirring a little to get all of the flavors mixed and happy. Serve with extra butter, honey, and salt.
