These Cinnamon Sugar Popovers – or “Pops” as we call them – are such a joy to both make and eat. The batter is pretty standard – a combo of milk and eggs, a little flour, salt and vanilla (and melted butter) – and we’re going to make things super simple by throwing it all in a blender, rather than whisking by hand. We can achieve maximum froth that way, I think.

That said, if you don’t have a blender that you like, or don’t feel like using one, you can easily whip up the popover batter in a large mixing bowl, with a whisk and a little muscle power. No harm, no foul.

I make these ALL THE TIME, in both sweet and savory iterations. But this is hands-down my family’s favorite way to enjoy popovers. That sweet cinnamon-sugar crust all around them is just totally irresistible. (Betcha can’t eat just one!).

I don’t know anyone who actually has a popover pan so I wrote the recipe specifically to be made in regular muffin pans. I use a large, 12-cup pan and it’s the perfect thing. These mini pops bake up tall and proud in their little cups, and you’ll never miss the popover pan, I promise. This works just as well.

How to Make Easy Blender Popovers

Okay, here’s the 4-1-1 on these popover babies:

  1. Grab your favorite blender and add the three eggs, a generous splash of vanilla, 1 TBSP melted butter, and 1.5 cups of milk – preferably higher fat (like 2% or whole).
  2. Add 1.5 cup of flour and a little salt. Blend ** just ** until mixed.
  3. Meanwhile, place a little pat of butter into each of 12 muffin cups (1 tsp). Place it into your preheated oven and let the butter melt – it only takes a few seconds. When it’s melted swirl or brush the melted butter around to grease the tins. In addition to keeping the pops from sticking, the butter gives the batter something to climb up as it bakes.
  4. After the popovers are out of the oven and cool enough to handle, brush them with melted butter and give them a roll-around in some cinnamon sugar. BOOM. Popover perfection.

Easiest Cinnamon Sugar Popovers

The most airy, fluffy little “pops” of cinnamon sugar sweetness. These popovers are so simple and come together easily in a blender. They’re foolproof! Rolled around in butter and a cinnamon-sugar crust and there’s really nothing better. NOTE: 12 teaspoons of butter is basically 3 TBSP. 

Ingredients

¾ cup granulated sugar 

1 TBSP ground cinnamon

12 tsp butter (for the pan) + 6 TBSP butter, melted

3 eggs

2 tsp vanilla extract

1.5 cups milk

1.5 cups all-purpose flour

½ tsp salt

Instructions

Preheat your oven to 450 degrees F. Place 1 tsp of butter in each of 12 muffin cups. Set aside for now. 

 

Combine the cinnamon and sugar in a shallow bowl or plate and set aside. 

 

In a blender, add the eggs, vanilla, milk, and 1 TBSP of your melted butter and blend until frothy and mixed. Add the flour and salt, and mix just until combined. 

 

Place the muffin pan in the oven and allow the butter to melt. Take it out as soon as that happens (takes about 30 seconds, if that) and brush/roll the butter around the pans to grease them fully. 

 

Pour the popover batter into the muffin cups, filling them almost to the top – a little more than ¾ full. Bake for 15 to 17 minutes, or until puffed and golden brown. Take them out and allow them to cool for about 6 to 8 minutes before transferring elsewhere. 

 

Brush each popover with some of the remaining melted butter and cover with the cinnamon sugar. Enjoy warm.

Notes

For an added depth of flavor, try using browned butter in place of the melted. SO GOOD.
