To date, the most popular recipe post on this site is my Whipped Feta & Goat Cheese with Hot Honey. It has consistently garnered the most clicks and visits, and for good reason – it’s incredibly delicious and easy as pie to make. Easier than pie – I dunno why pie has become so universally attached to the notion of ease, but dare I say that whipped feta is MUCH easier to make than pie.

But I digress.

Today, I’m giving you a really fun alternative option to the whipped feta appetizer – Roasted Feta! Hot Honey Roasted Feta, actually! This is just another way to wield the same salty/sweet flavors and utterly impress your guests. Or, if you’re like me, your very content party of one.

How to Make Hot Honey Roasted Feta

This has got to be the easiest recipe that I currently have on this website. I can’t think of any off the top of my head that are faster, simpler, or take fewer ingredients to make. It’s just so stinking easy it’s almost funny.

But what I find so wonderful about it, is the fact that something so unbelievably easy can really wind up as impressive and impactful as it does. This one really does seem greater than the sum of its very few parts, and I attribute that truth to the timeless deliciousness of the sweet/salty flavor combination.

As a total obsessive when it comes to sweet/salty and spicy/sweet flavors, I am here to tell you that this little-yet-mighty hot honey roasted feta really satisfies my love of those flavor profiles. Feta, with its inherent salty, brine-forward tang really meets the sweetness of the honey right in the middle – a perfect flavor marriage. Plus, the hit of spice from crushed red chili flakes just seals the deal, you know?

All you need is a small-ish baking dish, and you can use a pie plate or cake pan if you don’t have a small ceramic dish of some sort. I just recommend placing a big piece of aluminum foil in the dish, leaving an overhang (handles) that you can grab to help remove the feta to a platter after cooking. Otherwise, just use a suitable small earthenware dish and serve the finished dish right from there.

The cheese will bake for a short time at 400 degrees, getting all weepy and soft, and then we’ll drizzle it with honey and blast it under the broiler just until it begins to get a nice golden tan and some bubbles. That’s literally it.

Hot Honey Roasted Feta: Here’s the Step-by-Step:

Preheat your oven to 400 degrees F. Adjust your oven rack to the middle position. Place the feta in a small ceramic baking dish (NOTE: you can use a pie plate or even a cake pan, if you don’t have an earthenware dish; just line it with foil and leave a long “handle” of excess fool above the edges, so you can remove the feta to a platter after cooking).

Drizzle with the olive oil, covering the feta’s surface, and bake for 10 minutes, or just until the cheese is soft but not melted.

Take the feta out of the oven. Preheat the broiler. Cover the honey’s surface with the honey. Sprinkle with the chili flakes. Broil just until the cheese starts to brown and bubbles slightly. Serve with crunchy pita chips and a sprinkle of fresh thyme leaves (if using).

1/2 cup honey

1 tsp crushed red chili flakes

1 tsp fresh thyme leaves (optional)

Pita chips and/or fluffy pita bread wedges, for serving
