Just when you thought I was all done with the tomatoes … I go and drop a whole new situation here. Early September still sees some of the most gorgeous tomatoes, and the humble tomato sandwich will always be my favorite way to show them off. These Toasted Tomato and Bacon Sandwiches with Maple Cayenne Butter are INSANE. The flavor! The salty-sweet goodness! Gah. Almost more of an idea than some strict recipe, this is just my reminder to grab all those tomatoes while the gettin’s still good. And when they’re gone? Swap in some juicy apples or pears and carry on, my friends.
What you’ll need to make these Toasted Tomato and Bacon Sandwiches
A classic tomato and bacon sandwich gets a little MKL glam session today thanks to some whipped goat cheese (literally just goat cheese that we’ll whip with some water until spreadable), and a sweet and salty maple-cayenne butter.
INGREDIENTS
8 slices of good crusty bread (about 1/4″ to 1/2″ thick; any kind you like)
4 ounces goat cheese, at room temperature or softened
12 slices center-cut bacon, cooked
2 large heirloom tomatoes, thinly sliced
Salt and pepper, as needed
6 tablespoons butter, plus more as needed
1 to 2 tablespoons maple syrup
Pinch of cayenne pepper
How to make these Toasted Bacon and Tomato Sandwiches
Now, you could absolutely process the butter, maple syrup, and cayenne together in a food processor until you’ve created a single thing – a flavored butter – and then spread it on the bread pre-toasting. But. In the spirit of not having to wash any more dishes than is absolutely necessary, I just put a couple of tablespoons of butter and a drizzle of maple into the pan, along with like, 1/8 teaspoon of cayenne. hen. just swirl it all around until melty and mixed, and proceed with the toasting of things.
This is all to taste, guys. You might like things sweeter, more “maple-ey.” Or maybe you like a nice salty crunchy toast on the outside of your sandwiches. All good! Another pro move is to mix a little maple syrup into your goat cheese and sweeten things up all the way through. DELISH! T
DIRECTIONS
In a bowl, stir the goat cheese together with just enough water to help it get to spreading consistency. You can also use a drizzle maple syrup here, as it’s delicious with goat cheese. Season with lots of freshly cracked black pepper.
Spread as much/little of the goat cheese as you like on one side of each bread slice. Top with some tomato slices and some pieces of bacon, torn to fit as needed (I allow three slices per sandwich, give or take). Place another slice of bread on top, creating completed sandwiches.
Place a large skillet over medium heat. Add 2 tablespoons of butter and a couple of teaspoons of maple syrup to the pan, along with a tiny pinch of cayenne (crushed chili flakes also work). Allow it to melt, swirling it all around to mix. Then add two sandwiches (as long as they fit) and cook until nice and golden; about 3 to 4 minutes. Flip and cook on the other side until golden, adding a little more butter as needed to get even color (the exact amount of butter you use will really just depend on your bread type).
Repeat with the remaining two sandwiches and serve warm.
