Three cheers for Bubble Bread!

It might not be made from a fancy starter, but trust me when I say that this bread will forever and always get any party started. It’s true, guys. It’s lovably cozy and homey and it kinda reminds me of something my Mom would’ve made back in the nineties, back when a can o’ biscuits was a regular occurrence on every mealtime table, from morning to night. Yes! It’s Garlic Butter Bubble Bread! And dang is it good.

I didn’t invent this delightful concept. I’m just out here preaching it’s gospel, you know? This version of Bubble Bread (seriously, how great is the name?) features my own tweaks and twists to the myriad other variations you’ll see out there. And I think it’s just perfect. This is yet another recipe that is rife for the riffing and really, if you squint, you can see the monkey bread in there. Yes, Bubble Bread = Savory Monkey Bread. And I’m here for it.

A better garlic bread

Honestly I think one of my favorite things about this stuff is how very unpretentious it is. It’s not trying too hard or anything like that. It’s made of freaking biscuits, y’all. This isn’t high glamour cuisine? I love that. It really is just a canvas for garlic – a big, pillowy, flaky, soft platform for the garlic. I love garlic so very much, as exemplified in so many of the recipes on this site. My Tuscan Garlic Butter Chicken and Tuscan Garlic Butter Salmon are two of the most popular recipes I’ve ever shared, in fact.

What you’ll need to make this easy Garlic Butter Bubble Bread

I personally believe in the epically symbiotic partnership of butter + olive oil. The butter needs to be here because otherwise, we can’t call it: Garlic Butter Bubble Bread. Yes. But the addition of the olive oil to the gilded mix serves to keep the butter from scorching and darkening to high heaven on the bottom of the baking dish. That would be gross and it would be sad and bubble bread is honestly supposed to be the exact opposite of sad, and so. We olive oil.

Also. I call for three garlic cloves but you can do two, or you can do 22. That part is sort of up to you and your private, personal preferences. As they say, “you measure that shit with your heart.” You really do. If it’s helpful, a heaping tablespoon, plus a little extra, of minced garlic should do the trick for you.

Add the garlic, add the Italian seasoning (that link will take you to a Food Network post about Italian seasoning, if you’re wondering what’s in it). Next, and add a pinch of salt. Taste it! See what you think. Then tweak as needed.

INGREDIENTS

16-ounce can of flaky biscuits (8 biscuits)

4 tablespoons unsalted butter

3 tablespoons olive oil

3 large garlic cloves, minced or grated

1 teaspoon Italian seasoning

Salt, to taste (I use a big pinch)

1 cup shredded cheese(s) (I like mozzarella, fontina, provolone, and/or Colby Jack)

How to make Bubble Bread

This is a simple one, guys. Just really refreshingly easy. I mean, I don’t share things here that are difficult … it goes against my whole mission. But this one is especially simple – so easy a monkey could do it. Oh! Is that how monkey bread got its name? It all just makes so much sense now.

Anyway, we’ll basically lean on the convenience of some store bought biscuits here, and all you have to do its cut them up into quarters and arrange them in a baking dish. I have made this stuff in all sorts of baking dishes, truly. I’ve done this in a deep dish pie plate. I’e done it in a 9-inch cake pan. I’ve also done it in a weirdly sized rectangular baking dish. Anything goes! Just don’t use something so large that the biscuits are sort of lost in it. You want to actually contain the buttery mixture, and keep it from escaping too far from the biscuits pieces, as they will soak it up while they bake.

DIRECTIONS

Preheat the oven to 350 degrees F. Adjust the oven rack to the middle position.

Cut the biscuits into quarters. Roll each piece into a ball and place them in a baking dish, leaving a little space in between them, as they’ll expand or “bubble up.” (NOTE: you can use any dish you like – from a cake pan or pie plate to a ceramic baking dish and/or brownie pan. I use a round pie plate or a 9-by-13-inch baking dish. This is flexible!)

In a small saucepan over medium heat. Melt the butter with the olive oil, Italian seasoning, and a good pinch of salt. Stir to blend. When the butter has melted, pour the mixture all over the biscuit pieces. I usually roll them around to coat.

Bake for 15 to 17 minutes, or until nice and golden on top. Cover with the cheese and then bake until it is fully melted and is optimally gooey, about 3 or 4 more minutes. Serve warm.
